About the Role
The Baker is a hands-on production role responsible for preparing doughs, batters, laminated products, and other baked goods while supporting daily bakery operations. This position focuses on mixing, prepping, shaping, and producing a variety of breads and pastries to Colossus quality standards.
The Baker works closely with the bakery team to ensure all products are prepared accurately, efficiently, and consistently for daily service. This role requires strong foundational baking knowledge, attention to detail, and the ability to work in a fast-paced production environment.
What you’ll do
As a Baker, you will be responsible for executing production tasks that support bread and pastry preparation, ensuring consistency, quality, and efficiency throughout your shift. You will work with established recipes, production schedules, and food safety standards to ensure consistent quality and timely completion of all assigned tasks.
Doughs, Batters & Mixing
Scale and mix bread doughs, enriched doughs, and batters according to standardized recipes
Prepare batters for items such as cookies, muffins, cakes, or other baked goods as required by production needs
Monitor mixing times, temperatures, and dough development to ensure consistency
Set up and break down mixers and related equipment safely
Bread Production
Divide, shape, and portion dough by hand or with equipment
Manage fermentation and proofing processes
Load, bake, and unload bread in deck or rack ovens
Monitor bake quality, including color, internal structure, and doneness
Pastries, Cookies & Other Baked Goods
Portion, shape, and bake cookies and other small-format baked goods
Prepare and bake laminated or enriched products as assigned
Finish products according to established standards (cooling, garnishing, or packaging as applicable)
Slicing, Finishing & Staging
Slice bread and baked goods using approved equipment and safety procedures
Cool, package, label, and stage finished products for next-day service
Organize racks, shelves, and storage areas to support efficient handoff to other teams
Quality, Safety & Sanitation
Inspect doughs and finished products for quality, consistency, and accuracy
Follow food safety, sanitation, and allergen-handling procedures at all times
Clean and sanitize tools, workstations, and equipment throughout the shift
Maintain a safe, organized, and efficient work environment
Equipment & Operations
Safely operate and clean commercial bakery equipment, including mixers, ovens, slicers, and racks
Perform basic equipment checks and report maintenance or safety concerns
Follow all workplace safety and operational procedures
Communication & Team Support
Communicate production progress, shortages, or issues to bakery leadership
Accurately complete production logs or required documentation
Support a smooth transition between overnight and daytime production

Experience & Skills
Experience working in a bakery, food production, or similar hands-on production environment is preferred but not required
Familiarity with basic baking techniques such as mixing doughs and batters, baking, and handling finished products
Ability to follow written recipes, production schedules, and food safety procedures
Basic understanding of food safety and sanitation practices, or willingness to learn
Work Style & Abilities
Ability to work early morning and afternoon shifts reliably
Ability to work independently and manage time effectively during morning and afternoon production
Ability to maintain focus and attention to detail in a fast-paced environment
Ability to communicate clearly with team members and bakery leadership

Work Environment
Work is performed indoors in a commercial bakery setting
Regular exposure to heat from ovens and baking equipment
Exposure to flour dust, food ingredients, and cleaning agents
Noise levels may vary and can be moderate to loud due to equipment operation
Work may involve working in confined or shared spaces and around moving equipment
Early-morning and afternoon hours are required, and lighting conditions may vary during shifts
Physical Demands
Ability to stand and walk for extended periods, often for the majority of the shift
Frequent use of hands and arms for mixing, shaping, loading, and handling dough and baked goods
Repetitive motions involving the hands, wrists, arms, and shoulders
Ability to bend, stoop, kneel, crouch, and reach above shoulder height as required for production tasks
Ability to push, pull, lift, and carry materials, ingredients, or finished products
Ability to lift and carry items weighing up to 25 pounds frequently and up to 50lbs occasionally, with or without reasonable accommodation
Sensory & Cognitive Requirements
Ability to visually inspect dough and baked goods for quality, consistency, and doneness
Ability to follow written and verbal instructions, recipes, and safety guidelines
