Experienced Viennoiserie Baker/ Lamination- Starting at $22/hr, DOE
Responsibilities
Tempering and monitoring temperature of butter and dough
Lamination of croissant pastry with speed and accuracy
Ability to accurately cut croissant shapes for production
Responsible for meeting deadlines, monitoring inventory
Must be able to work well with other bakers and managers, ability to accept feedback and self-reflect on work and production methods is a must.
Qualifications
• Good organizational skills
•Must be able to adhere to health and safety regulations
•Minimum 2 years of experience in high volume production baking
•Ability to understand baker's math and calculate recipe conversions
•Advanced knowledge and technique of croissant pastries with regards to production, handling, shaping, baking
•Ability to work unsupervised with no quality decline
Bakery Production Team Member PT/FT- Starting at $21/hr
This is a part-time or full-time position out of our Long Beach bakery, but will be moving our production to a new facility in Anaheim this May. We are actively looking for folks who interested in working in our new orange county baking space.
-Afternoon shifts (11-7) to start, we plan on implementing a more traditional morning/day schedule when we move to the new facility.
Weigh and measure ingredients accurately, knowledge of metric system (grams and kilos)
Knowledge of and experience dough handling
Experience monitoring dough and proofing temperatures
Inventory control, quality control
Proper cleaning and sanitation standards
Lamination experience preferred for lamination roles
Qualifications
Attention to detail in all aspects of baking
Dedicated to working as a team towards one goal
1 + year professional cooking or baking experience or culinary school equivalent
French pastry and bread experience is helpful
Must be able to receive regular constructive feedback and adjust to the needs of the bakery and team
